Happy Jesus' Birthday month!! I have discovered I love roasted veggies! I have been making them at least once a week now during these semi-cold months. The recipe is super easy for a healthy side or main dish. Remember God’s original diet was the Genesis 1:29 diet-Then God said, "I give you every seed-bearing plant on the face of the whole earth and every tree that has fruit with seed in it. They will be yours for food.”

We now know that following God’s original diet will provide a long, healthy life and keep you feeling so good! So try this simple, tender, tasty roasted veggie recipe using your favorite seasonal vegetables or even frozen veggies will work too.

Roasted Vegetables with coconut oil and paprika-

Place in a large bowl your favorite, small sliced vegetables. Scrub and rinse your veggies first. I used organic red potatoes cut in quarters, skin on, 1 inch chopped carrots, brussel sprouts, garlic cloves, kale pieces, 1 inch asparagus slices, and onion. Melt 1 cup unrefined virgin coconut oil in microwave then pour half over vegetable mixture. Sprinkle on a little salt and pepper, I used Brags Organic Sea Kelp Delight Seasoning-a healthy substitute to salt, and paprika, Italian seasonings if you would like and a splash of cayenne if you like heat. Then get your hands dirty-mix and massage the veggies in the bowl so the coconut oil and seasonings get distributed throughout. Pour the rest of the coconut oil on the veggies and repeat seasoning process and mix again with your hands.

Place in a baking dish and in preheated oven at 375 degrees for 45 minutes for still crunchy veggies or for 1 hour for really tender potatoes😊 Eat naturally-avoid processed, fake foods and eat more of what God made-you will feel so good every day!
