Keep it simple-quick, healthy food fixes

When trying to eat better, remember your stomach is just slightly larger than your fist. With that in mind, why not try my favorite quick and easy ideas!
-Hard boiled eggs-make a bunch at the beginning of the week to last you and your family a few days. Bring several eggs to a boil, I usually allow 5 minutes boiling time then remove from heat and let rest for another 5 minutes in the hot water for soft boil and 55 to 10 minutes longer for hard boil. Eat for breakfast, lunch, snacks or dinner!
-Easy Egg frittata-grease a baking dish with coconut oil. Drop your favorite veggies-frozen or regular into the dish. Crack 4-8 eggs and beat together, pour into dish depending on number of mouths to feed! Bake at 400 degrees for 30-40 minutes depending on number of eggs.
-Eat a sweet, organic fiji apple for lunch
-Bake a sweet potato for a super healthy lunch or dinner
-Toss broccoli with melted coconut oil, sprinkle with fav seasonings and bake in 450 toaster oven for 20 minutes
-Baked salmon filet (I buy wild caught salmon and keep in freezer, defrost the night before or place in cold water earlier in the day) in 350 degree oven for 11-13 minutes depending on how you like to eat your fish~I enjoy slightly done fish and go for 11 minutes but 13 minutes will cook well.
-Enjoy organic, non-gmo popcorn popped in hot air popper, drizzle with melted coconut oil and then sprinkle with celtic sea salt and nutritional yeast-available at health food stores-ask the sales person for this.
